Focus Session - Optimizing Pasteurization for Microbial Stabilization of Non-Alcoholic Beverages

Description: Ensuring microbial stability in non-alcoholic beverages presents unique challenges, particularly in achieving effective pasteurization without compromising product quality. While the absence of alcohol in alcoholic beverages serves as a key hurdle for microbial spoilers to overcome, it can obviously not be relied upon for microbial stabilization in non-alcoholic beverages. As consumer demand for these beverages increases, brewers and beverage producers require optimized pasteurization profiles that can maintain the microbial quality of the product while preserving sensory attributes.

This focus session will cover various aspects of pasteurization, including the microbial load in the pasteurization equipment, its implications on worker safety and product integrity, the development of lab-scale pasteurization models, and a standardized yeast asco-spore based validation system. We will also discuss the implementation and scale-up of the final pasteurization process.

Relevance: Effective pasteurization is crucial for breweries and beverage producers to ensure the microbial stability of their non-alcoholic offerings, particularly in the context of non-alcoholic beer being the fastest growing product segment. Meeting the increasing consumer demand for high-quality, safe products, optimized pasteurization profiles are essential for maintaining product integrity while meeting stringent microbial quality standards.
