Simon Carlsen serves as the Principal Application Specialist in the Fermented Beverages department at Novonesis, where he has been a pivotal contributor since joining in 2018. His work primarily focuses on applying existing products to the brewing industry while leading the development of innovative bacterial and yeast cultures for brewing applications.
Simon’s expertise has been central to advancing non-alcoholic and alcohol-free beer production, with a particular emphasis on optimizing the use of non-Saccharomyces yeast. Following a corporate merger, his responsibilities expanded to include the application of enzymes in brewing, further broadening the scope of his contributions to the field.
Simon holds a BSc in Chemical Engineering, an MSc in Biotechnology, and a PhD in Metabolic Engineering, providing him with a strong foundation to drive innovation and solve complex challenges in brewing science.
