Joined Kirin Brewery Company, Limited in 2003 and assigned to the Brewing Research Laboratory.
After a name change and organizational restructuring, I assumed my current position.
I have conducted research and development on all aspects of beer brewing, from raw materials to filtration. Recently, the relationship between peptides and Maillard reaction products in beer and flavor has become a subject of research.
