Bernardo Guimaraes is a Senior Graduate Assistant and 3rd year PhD candidate at the University of Arkansas in the Department of Food Science. He works under the supervision of Dr. Scott Lafontaine. Bernardo holds a Bachelor of Science and Master of Science in Chemistry from University of Brasilia, Brazil, where he studied Brazilian hops. Bernardo worked for two years at Hop Capital Beer, a craft brewery in Brasilia, Brazil. Bernardo’s graduate research is focused on the assessment of rice as a novel malting raw material by exploring the malting, brewing, economics, and practicality of using malted rice.
