Chijindu Onwuchekwa is a brewing scientist currently pursuing an M.Sc. in Food Science at the University of Arkansas, where her current research explores alternative sake production methods using Western brewing techniques and enzyme optimization.
Chijindu brings over five years of hands-on brewing experience from Bature Brewery in Lagos, Nigeria, where she led brewing operations, quality control and process developments.
In 2023, she was awarded UC Davis Tapping Potential Scholarship and earned her Master Brewer Certification from the prestigious UC Davis Master Brewers Program in 2024. This experience further strengthened her technical expertise and reinforced her commitment to advancing the brewing industry through research, education and collaboration.
Chijindu is passionate about using food science to make brewing more accessible, sustainable, and adaptable. She enjoys connecting with fellow researchers and brewers.
